Louisiana red beans




*ingredients :

3 strips of bacon, cut into lardons
45 ml (3 tablespoons) olive oil
2 stalks finely chopped celery
1 onion finely chopped
3 finely chop garlic clove
19 oz (540 ml) can kidney beans, rinsed and drained
1 can  chop tomatoes
250 ml of water or chicken broth
1/2 teaspoon (2.5 ml) red 15 ml (1 tablespoon) Worcestershire sauce
3 light or spicy Italian sausage, peeled and cut into sections as desired
chopped parsley
Salt and Pepper

* Preparation :

In saucepan, brown bacon in half oil. Add celery and onion and fry until golden brown. Add more oil as needed.

Add garlic and cook for 1 minute. Add the rest of the ingredients except sausage and parsley. Salt and Pepper. Bring it to a boil. Covering and simmer for an hour or to vegetables are tender. Adjust spices.

Meanwhile, in nonstick skillet, brown sausages in remaining oil.

Serve the bean mixture over boiled white rice and garnish with sausage and parsley.
